01 - Peel eggplant and cut into uniform fry-shaped strips, approximately 1/2 inch thick.
02 - In a shallow bowl, whisk eggs. In another bowl, combine panko breadcrumbs, parmesan, garlic powder, oregano, salt, and pepper. Dip each eggplant fry in beaten egg, letting excess drip off, then coat evenly with breadcrumb mixture.
03 - Lightly coat the air fryer basket with nonstick spray. Place coated eggplant fries in a single layer without overcrowding; work in batches if necessary.
04 - Set air fryer to 400°F. Cook fries for 12–15 minutes, turning halfway through, until golden brown and crisp.
05 - Transfer cooked fries to a wire rack and let cool slightly before serving.
