# How-To:
01 - Preheat oven to 325°F. Line a large rimmed baking sheet with parchment paper and set aside.
02 - In a large bowl, stir together rolled oats, chopped mixed nuts, shredded coconut, sunflower seeds, ground cinnamon and salt until evenly distributed.
03 - In a medium bowl, whisk honey, melted coconut oil and vanilla extract until homogenous and fluid.
04 - Pour the wet mixture over the dry ingredients and fold thoroughly with a spatula until all solids are evenly coated.
05 - Spread the mixture onto the prepared sheet and press down firmly with the back of a spatula to create a dense, even layer—this encourages large clusters.
06 - Bake for 25–30 minutes, rotating the tray halfway through, until the surface is golden brown. Do not stir during baking to preserve cluster formation.
07 - Remove the tray from the oven and allow the granola to cool fully on the sheet; it will crisp and set as it cools.
08 - Once cooled, break the slab into large clusters. Gently fold in dried fruit or chocolate chips if using. Transfer to an airtight container.
