→ Zucchini Ribbons
17 - 2 medium zucchinis
18 - 1 tbsp olive oil
19 - 1 tbsp lemon juice
20 - Sea salt and black pepper to taste
# How-To:
01 - Preheat oven to 425°F. Line a baking sheet with parchment paper and set aside.
02 - In a shallow bowl, beat eggs. In a separate bowl, combine almond flour, Parmesan cheese, smoked paprika, garlic powder, sea salt, and black pepper. Mix thoroughly.
03 - Dip each avocado wedge in beaten egg, then coat completely in almond flour mixture. Place on prepared baking sheet in a single layer. Lightly spray with olive oil. Bake for 15-18 minutes, turning halfway through, until golden and crispy.
04 - While avocado fries bake, pat steak cubes dry with paper towels. Season generously with sea salt and black pepper on all sides.
05 - Heat olive oil in a large skillet over medium-high heat until shimmering. Add steak cubes in a single layer without crowding. Sear 1-2 minutes per side until browned externally while maintaining pink interior. Remove with tongs and set aside.
06 - Reduce heat to medium. Add unsalted butter to the skillet. Once melted, stir in minced garlic and cook for 30 seconds until fragrant. Return seared steak bites to skillet, toss to coat evenly in garlic butter sauce. Sprinkle with fresh chopped parsley.
07 - Using a vegetable peeler or spiralizer, shave zucchinis into thin ribbons. Transfer to a bowl and toss with olive oil, lemon juice, sea salt, and black pepper to taste.
08 - Arrange garlic butter steak bites in center of serving plate. Place avocado fries alongside. Top or surround with zucchini ribbons. Serve immediately while hot.
