17 - 20 Golden Oreos or vanilla cookies, crushed
18 - 4 tablespoons unsalted butter, melted
19 - 1 box (3 ounces) dry strawberry Jell-O powder
# How-To:
01 - Preheat the oven to 325°F (160°C).
02 - Combine graham cracker crumbs or crushed Golden Oreos with sugar and melted butter until evenly moistened. Press firmly into the bottom of a 9-inch springform pan.
03 - Bake the crust for 10 minutes, then remove and allow to cool completely.
04 - Beat softened cream cheese and sugar until smooth and fluffy. Add sour cream and vanilla extract, mixing until combined. Incorporate eggs one at a time, gently blending after each until just combined.
05 - Pour cheesecake batter over cooled crust. Bake for 45–50 minutes until the center is slightly wobbly. Remove from oven and cool completely.
06 - Refrigerate the cheesecake for at least 4 hours, preferably overnight, to set firmly.
07 - Dissolve strawberry Jell-O powder in boiling water. Stir in cold water and allow the mixture to cool and thicken slightly (about 30–45 minutes).
08 - Fold whipped topping and chopped strawberries into the thickened Jell-O mixture. Spread evenly over the chilled cheesecake layer.
09 - Refrigerate for 2–3 hours until the strawberry layer is firm.
10 - Whip heavy cream with powdered sugar and vanilla extract in a chilled bowl until stiff peaks form. Spread evenly over the strawberry layer.
11 - Combine crushed cookies with melted butter and dry strawberry Jell-O powder. Mix thoroughly until crumbs are evenly coated.
12 - Sprinkle the shortcake crumble generously over the whipped cream layer.
13 - Chill until ready to serve. Run a knife around the edges, remove from pan, slice, and enjoy.
