03 - 1/2 cup plain Greek yogurt
04 - 2 tablespoons chia seeds
05 - 2 tablespoons maple syrup or honey
06 - 1 vanilla bean with seeds scraped, or 1 1/2 teaspoons pure vanilla extract
07 - Pinch of salt

→ Coffee Layer

08 - 1/2 cup brewed espresso or strong coffee, cooled
09 - 1 tablespoon maple syrup or honey

→ Toppings

10 - 1/4 cup whipped cream, dairy or coconut
11 - 1 tablespoon mini dark chocolate chips or cocoa nibs, optional
12 - 2 teaspoons vanilla granola, optional

# How-To:

01 - Combine oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla bean seeds or extract, and salt in a medium bowl. Stir thoroughly until all ingredients are fully incorporated.
02 - In a small bowl, combine cooled brewed espresso or strong coffee with maple syrup or honey. Stir until sweetener dissolves completely.
03 - Divide half of the oat mixture evenly between two 12-ounce mason jars.
04 - Drizzle half of the sweetened coffee mixture over the oats in each jar.
05 - Top each jar with the remaining oat mixture, then finish with the remaining coffee mixture.
06 - Seal the jars and refrigerate for at least 8 hours to allow oats to hydrate and flavors to meld together.
07 - Top each jar with whipped cream, chocolate chips or cocoa nibs, and vanilla granola if desired. Serve cold directly from the jar.

# Expert Advice:

01 -
  • Zero morning stress because your breakfast is literally done while you sleep, ready to eat straight from the jar.
  • The vanilla bean swirled with cold coffee tastes indulgent but actually fuels your whole day without any guilt.
  • You can make two jars at once, which means meal prep that feels like self-care instead of a chore.
02 -
  • The coffee needs to be completely cooled or it will warm your oats and you'll end up with lukewarm breakfast, which defeats the entire refreshing purpose.
  • Stir everything in the oat base really thoroughly or you'll bite into pockets of unsweetened oats and dry chia seeds, which is honestly disappointing after all that waiting.
03 -
  • Make these the night before a busy day or travel, because cold breakfast you've already made is basically the same as having a personal chef show up in your fridge.
  • If your oats taste too thick after sitting overnight, just add a splash more milk when you eat them—nobody needs to know it wasn't perfect straight from the jar.
