# How-To:

01 - Preheat oven to 350°F. Grease a 24-cup mini muffin pan or line with mini paper liners.
02 - In a microwave-safe bowl, melt butter. Stir in sugar, eggs, and vanilla extract until smooth.
03 - Add cocoa powder, flour, salt, and baking powder. Stir just until combined, being careful not to overmix.
04 - Spoon batter evenly into prepared mini muffin cups, filling each about three-quarters full.
05 - Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
06 - Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
07 - Beat cream cheese and butter together until creamy. Gradually add powdered sugar and vanilla, then beat until fluffy. Add milk as needed for spreadable consistency.
08 - Once brownies are completely cool, pipe or spread a dollop of frosting on each bite.
09 - Decorate with red, white, and blue sprinkles. Top with mini sparklers or festive picks if desired.

# Expert Advice:

01 -
  • They're fudgy enough to satisfy chocolate cravings but small enough that nobody feels guilty eating three in a row.
  • The cream cheese frosting isn't cloyingly sweet, which means it actually lets the brownie shine instead of drowning it.
02 -
  • If you overbake these by even a minute, they go from fudgy to cakey, so set a timer and start checking at 12 minutes because ovens vary wildly.
  • Cold cream cheese and butter won't blend smoothly into that fluffy frosting, so let them sit on the counter for 20 minutes before you even think about mixing.
03 -
  • Room temperature cream cheese is non-negotiable for smooth frosting; take it out of the fridge 20 minutes before you start mixing.
  • A piping bag with a small round tip makes you look like you know what you're doing, but honestly a small offset spatula works just fine if that's what you have.
